Small entrepreneurs who set up stalls to sell their food usually has no fixed timing as to when they open or close their stalls.  If business is good and what they are offering had ran out, they will close the stall early. 
Some stayed open late into the night, just like Joe, who runs his own roadside stall selling burgers. 
What Joe was about to experience for a whole week is not something one would wish to encounter on a daily basis.
