Day five of TME’s 5th annual Colorado road trip landed us in Paonia, Colorado. Paonia is favorite to be sure featuring rich agriculture and amazing people. Upon or arrival at our lodging, Big B’s Delicious orchards, we were fortunate to meet Kori Stanton. Kori is a local gal and her family owns a farm down the road. The Stanton family, Campbell and Susan, and their daughter Kori work daily to provide the best products for the community of Paonia, Colorado. Their farm has lavender front and center. They distill it for use in lotions, soaps, and oil. They also make their own honey, mints, and medicinal herbs. Located at the old location of the Palisade Cafe, Fidel’s Cocina and Bar is the new spot to be at. Jeff Snook and Jody Corey with help from their dog, Fidel, started this place with two things in mind, energy and flavor. Tacos and margaritas on the patio are just an added bonus. Whether it is their spicy cucumber margarita or a plate of their poblano fries, you are in store for quite an experience at Fidel’s. They also offer an array of tacos, greens, and an impressive stable of spirits at their cozy bar. In the video below Jeff and Jody tell us how Fidel’s started and what it takes to run a restaurant in a day and age of skyrocketing inflation, labor shortages and food costs that are through the roof. Chef James Doxon from Vibe Concepts joins the discussion to add how his Denver based restaurant group is handling these very same issues.

Located in Cape Coral, Nice Guys Pizza gives you pizza and cocktails that are carefully crafted by two service industry pros and their skilled team. Greg Gebhard and his wife Jovana invite you to step into their punk rock labyrinth for a food and beverage escape. Nice Guys number one goal is to impress. You can get a ‘Some like it Hot’ which has chorizo, calabrese, salami, basil, and habanero aioli. ‘Hot Honey’ has salami, prosciutto, garlic, and hot honey drizzled on top. When Cardi B sang about making money moves in Bodak Yellow, she must have had chef Dana Rodriguez in mind. Chef Rodriguez is plenty busy with her two existing concepts in Work and Class and SuperMegaBien as well as the highly anticipated January opening of her newest project Cantina Loca. That would be more than enough for most people but chef Dana isn’t like most people, she is “loca,” as her nickname describes her. But we think she’s crazy like a fox. “Loca’s” most recent move is to team up with the new owners of Casa Bonita. The creators of the TV show South Park, Trey Parker and Matt Stone, know talent when they see it. Making chef Rodriguez an offer she couldn’t refuse to be executive chef/partner of the “Disney Land of Mexican restaurants” was an easy decision for duo. Revamping the defunct Casa Bonita won’t be an easy task though, but chef Dana is up for the challenge. In this episode of The Modern Eater chef Dan Rodriguez visits with Greg Hollenback to talk about what it’s going to take to put Casa Bonita back on the map as a destination Mexican Restaurant in Colorado. “Change nothing and improve everything” seems to be the motto as this dream team barrels forward with lofty goals for the end of summer or fall reopening of Casa Bonita.
